Vanilla and Cotton Candy cupcakes

Ingredients

INGREDIENTS 

CUPCAKES 

  • 1 ¼ cup (300 ml) flour
  • 1 ¼ tsp. (6.25 ml) baking powder
  • 1/2 tsp. (2.5 ml) salt
  • ½ cup (125 ml) salted butter
  • ¾ cup (60 ml) sugar
  • 2 ambient temperature big eggs
  • 2 tbsp. (10 ml) vanilla extract
  • ½ cup (125 ml) buttermilk (or you can mix ½ cup milk with 1 ½ c. tsp. of lemon juice)

Instructions

Cupcake's Instructions 

  • Preheat the oven to 350 °F and put cupcake liners in the muffin pan.
  • Combine flour, baking powder, and salt in a medium bowl. Set aside.
  • In another bowl, by hand or with a hand mixer, beat the butter and the sugar for 5 minutes until you get a creamy mixture.
  • Add the eggs, making sure that each egg is beaten into the mixture. Add the vanilla extract and mix it again.
  • Run your mixer at the minimum speed and combine the flour mixture and the buttermilk.
  • Add the mixture to the cupcake liners.
  • Bake for 20-23 minutes at 350 °F, or until a toothpick comes out all clean.
  • Let cool at room temperature and enjoy!

Frosting’s Instructions

  • By hand or with a hand mixer, mix the butter, cream cheese, and icing sugar until you get a smooth mixture with no lumps.
  • Add melted white chocolate and blend it. If the icing is too soft, put it in the refrigerator for a few minutes, mix from time to time, or you can add a little bit of icing sugar.
  • Spread your icing onto the cupcakes. Let them cool in the refrigerator for 15 minutes.
  • During this time, melt the fondue. When it is ready, put the chocolate in a large bowl, but not too deep.
  • Slowly turn the vanilla frosting into the fondue with your spoon or your piping bag and put the mix in the refrigerator.
  • Put some commercial cotton candy on top if you want a little fantasy.
