No-bake gourmet brownies

A yummy vegan dessert with only a few ingredients*!

Makes 9 brownies


  • 1 1/2 cups unsalted walnuts of your choice, roasted or raw (we used walnuts and almonds, half and half)
  • 2 1/2 cups Medjool dates, pitted
  • 3/4 cup cocoa powder
  • 1/4 cup vegan protein powder
  • 1/4 cup flour
  • 3 tablespoons maple syrup
  • 1 tbsp. vanilla extract
  • 1/4 tsp. fleur de sel

Creamy chocolate ganache


If your dates are a little dry (hard), soak them in boiling water for 15 minutes

You can also simply omit the protein and replace it with 1/4 cup of cocoa powder

  • Line an 8 x 8-inch square pan with foil. Set aside.
  • In a food processor, grind nuts until texture resembles wet sand. Then add dates and puree. The texture should be very smooth (no lumps).
  • Add all the other ingredients and reduce again until the mixture is smooth.
  • Transfer the mixture to the pan, press evenly on top using a piece of parchment paper and your palm to flatten it out, then refrigerate for 1 hour.
  • Prepare our creamy chocolate ganache, spread it over the brownies, refrigerate again until the ganache is set, cut and serve.


  • In a small saucepan over low heat, heat coconut cream (just below boiling).
  • Remove from heat and add chocolate. Let stand a few minutes, then stir with a whisk. The ganache should be completely melted at this point. If it is not, return the pan to the heat and cook for a few more seconds, stirring.
  • Transfer to a medium bowl and let the mixture cool for 15 minutes at room temperature or 5 minutes in the refrigerator.
  • Using a hand mixer or stand mixer, whip the ganache for 5 minutes to thicken.
  • Garnish your pastries with ganache and serve!
