Cherry chocolates bites

Every year, my wife and children and I make this family recipe together. It makes everyone happy at Christmas and this year, our  has become quite simply magical because of the Chocolats Favoris’ amazing fondue.

Ingredients

  • 1/2 cup of peanuts or coarsely chopped soybeans
  • 2 cups of powdered sugar
  • 1 cup of peanut butter (or soy butter, for those with allergies like me!)
  • 2/3 cup of grated coconut
  • 2 boxes of Maraschino cherries
  • Corn starch to thicken the syrup

Preparation


Step 1

Separate the cherries from their juice. Put the juice in a saucepan over low heat. Dilute the cornstarch in a little cold water, and then add the cherry juice. Heat while stirring and adjust until the liquid reaches the desired texture. Let cool. This is what goes into the centre of your chocolates and surrounds the cherry.


Step 2

Follow the directions on the fondue can to melt the chocolate. Heat the paraffin, peanut or soy butter, powdered sugar and coconut in a pot on medium-low heat. Add the melted chocolate (we don’t put it in at the beginning to avoid unnecessarily overheating it), and then stir it until the mixture is consistent.


Step 3

With a teaspoon, fill the bottom of each silicone mold with the warm chocolate mixture. Spread the chocolate to also properly cover the sides.

(Make sure you save enough chocolate to cover all your cherries!)

Place a cherry in each space. Pour the liquid 2/3 of the way up the cherry. Cover it with a layer of chocolate so that the liquid stays inside.

(It might be necessary to warm the chocolate again for a few seconds if it becomes difficult to work with, or even add a few drops of milk to it if the texture is no longer ideal.)


Step 4

Refrigerate overnight or place in the freezer for 2-3 hours. Turn the silicone mold upside down. Remove the chocolate from the mold by gently pressing on each cherry blossom.

For everyone’s delight, put them in your choice of wrapping until eaten!

(At our place, we wrap them individually in aluminum foil, place them in a hermetic freezer bag with the air removed, and then freeze them. When it comes time to serve them, we remove them from the wrapping and place them on a festive plate so they are more presentable.)
